It's because you never know 100%. Even if you think you know, you will always think about the what ifs. Even if the chances are 1 in a billion, your mind and heart will contemplate the possibilities which would sometimes make it harder for you to meet someone else. But by confessing and getting rejected, you can move on. You won't ever wonder what would have happened. You know for a fact the answer. Also, there is always the possibility of having a favorable answer. Moreover, I personally believe it's way better to get rejected and deal with the awkwardness together than having them wonder if they did something wrong to make me change how I interact with them.
Now, regarding getting rejected. There's the problem that sometimes when they turn you down, they aren't clear about it or try to give you an excuse to not hurt your feelings. Depending on the excuse, you might take it as there is still some hope.

I can’t wrap my mind around the need to confess/profess one’s love to someone regardless of that person’s feelings (or especially when you know darn well the feeling is not reciprocated). I would really love it if someone would explain the logic behind this. I have watched so many Korean series and seen this played out over and over. 🤦🏻🤷🏻

Fasting a long time before eating will backfire. If you want to eat more, you need to not only fast a long time but drink liquids from time to time. ALSO, you need to have something light 1-2 hours before the meal (no bread, no rice, no pasta, no meat, or any food that isn't digested quickly). I usually go for a fruit or a light soup with some chopped vegetables. You haven't used your stomach all day so you don't want to surprise it with an overwhelming amount of food. You will actually end up eating less than usual.
For Muslims, it's worse because we don't eat nor drink anything from dawn till dusk. A staple for any Ramadan meal is soup. We usually start with soup and eat slowly the appetizers before eating the main course. Doesn't matter what soup it is. If it's Ramadan, soup will most probably be served. Muslims always say they get fat during Ramadan. Others assume it's because we eat more food, but that's incorrect. We eat less food. We get fat because of the ungodly amount of deserts we eat XD Anyone who says they don't get fat during Ramadan means they don't eat Ramadan sweets.
