I can’t start all of them! But I’ll see what people want. And from the suggestions I’ll make a poll here and on YouTube to see interest ❤️

For a AoT replacement, Vinland Saga has similar vibes and depth, it's on going, with 48 episodes available at the moment. For a Game of Thrones style epic with heart wrenching moments that are probably on it's own level, Berserk. There's an og 90s anime, and there's also some modernized movies available for the first arc, the Golden era arc. I believe the movies were also adapted as a show and available on Crunchyroll.
