one fact I think it's important to remember is that every avatar before Aang learned each element one by one before moving to the next. Tenzin most likely learned this from Aang and is trying to keep Korra focused. Korra at this stage still lacks patience which air bending is all about. If she can't even master air bending then how is she going to be disciplined enough to master the spiritual side of being the avatar? At least this is probably Tenzin's perspective.

Also fun fact, the first moving picture he showed of the Ostrich Horse was a reference to The Horse in Motion, a 3 second film of a horse running from 1878. It was revolutionary for its time, and was very pivotal to the future of film.
