I think you misunderstand the term "monk" here. In a lot of fantasy stories made in Japan, a monk is some kind bare-handed fighter, closer to a shaolin monk than to a priest. In a nutshell an oriental monk. Even if most fantasy settings in japan are european-inspired, you still have some oriental specificities here and there, like this. It must not be confused with a priest here in Frieren.
