Two things to note: 1. The name Snips came about because the first time the two of them got a chance to talk one on one, Anakin told her to not get snippy with him as she was showing attitude. 2. My best bet for why the droids would only be using one arm in that specific fight is that they were approaching in formation on flat ground. It might be hard to tell, but I'm guessing each row was staggered, so each droid was firing over the right shoulder of the droid in front of them. If they used both arms while marching straight like that, they'd be firing on their own troops.
