Your comments on how you won't see what you don't want to see are actually spot on for why the Jedi don't see chancellor palpatine as evil. The Jedi know the dark side of the force is all around Palpatine, but they believe he is being manipulated by the sith lord. Becuase Palpatine basically controlls the galaxy since the senate has given him so much power. So he can't be the sith, since he already has what the sith want and are trying to attanin.
