One thing, that wasn't quite well conveyed in the anime is the fact that theresia didn't want to be the sword saint or master swordsman as said in the anime. But it's like destiny, a heavy burden, because that title isn't earned, people are almost born with these superhuman abilities, think of them as walking talking nukes. So yeah, even though technically theresia still would have probably been stronger than wilhelm, he was able to beat her in terms of sword fighting, thus giving her enough reason to justify living like the normal life she wanted to. In short wilhelm, just wanted to give her the life that she wanted. Also yeah rem might not be depressed as all hell and just searching for a reason to die anymore, but she's still full the same mental issues as before, so her obsessing over subaru is actually worse than you think.
