As someone has already stated, when Sannes was being tortured and they were showing those different scenes of people getting caught/tortured/killed, the one where there was a couple trying to fly with a hot air balloon was actually Armin's parents. This isn't really a spoiler since it never gets mentioned/shown in the show after that, but the author did confirm that those were Armin's parents. They got killed by the Interior military police for trying to fly with a hot air balloon.

To clarify a few questions you had about episode 1: Not a lot of time has passed between the end of season 2 and the start of season 3. Mikasa was still recovering from being grabbed by the titan when they were chasing after Bertholt and Reiner in the finale. Levi's leg was also still gimpy from fighting the female titan in season 1. The scene at the beginning of episode 1 was an implied flash forward because of Eren's hair length. Also, Eren's titan form looked malnourished because they were performing experiments and he was being overworked/tired.

Love that last name reveal for Levi. Also the new theme song feels so melancholy, showing Eren, Armin and Mikasa as children playing happily and carefree and contrasting it to their lives now where there's death and deception on all sides. That's why it's my favorite, it's beautiful, sad and wistful. The image of a younger, carefree Eren running around an older, serious Eren with the fate of their world on his shoulders especially gets me in the feels.

So there's was a cool little detail shared by Sannes. When describing how the first interior squad has dirtied their hands to protect the king's peace, he mentions a couple that tried to fly. If you can recall to the first season, there was a scene where Armin was showing a "illegal" book about the outside world to erin. In this scene Armin mentions that his parents will be going to the outside world soon. Armins parents were that couple that tried to fly. Sannes also mentions a teacher too smart for his own good and a whore that screwed the wrong man, but ill let you guys figure out who those two are. There're thousands of small details similar to this scattered around in the series that add more depth and just makes you appreciate the show even more.
