Another factor for why Kariya struggled with controlling Lancelot/Berserker is that Lancelot was especially obsessed with Saber. You can't truly control a Servant unless you're actively using a command seal to order them around, and since there are only 3 command seals, Kariya had to put up with Lancelot always losing control when Saber was around.

You're missing a good amount of extra scenes for Unlimited Blade Works that only make the show better. Hulu has the first TV version, and Funimation/Crunchyroll has the additions/improvements that they added with the later release of the Blu-ray version. Plus, most people are probably watching this on Crunchyroll or Funimation anyways, so a lot of your viewers are probably getting really confused because the absence of the added scenes in the Hulu version is throwing them off sync. If you watch it on Crunchyroll, it is listed as just "Fate/Stay Night" for some reason... Crunchyroll forgot to add the "Unlimited Blade Works" in the title, but it is the same show. Of course, you could consider just buying the blu-rays, but that's probably a more expensive option and I can't know if you like Fate enough to spend that money.
