To clarify, Uncle Iroh is very much dead, his spirit just decided to stay in the spirit world which is why Korra and others have seen him. Sokka (and Suki) didn't have any kids. There are graphic novels you can read online that take place between end of Last Airbender and Korra, also cover what happened to Zuko's mum!
