It took me a few watches of that moment in editing to see if he actually bites the arm, and it still wasn't clear haha. It looks more like the monster misses, but yeah I guess he did bite it off

I read somewhere that when he came in for the interview he came with full make-up and just blew away the interviewers. Side note with Shank's arm. I rewatched the scene a few times to see since it wasn't really clear to me either and I already new what happened. The monster bit it off when it attacked, just before the whole stare down thing.
