The fish market bidding is usually in the morning. When people want to buy fresh fish and the fisherman sell them in the morning sometimes first come first serve or they do bidding. The street markets in the morning are interesting. When I was staying at a friend's I went with her mom in the morning to get ingredients for the week/day. I haven't seen anything like that in the US but it was a nice experience.
