Emilia just went crazy from all the trials and no one being there for her. Subaru and Roswaal confirms it as well so that the viewers would'nt be confused.

Lets be honest with his temper there wouldn't have been any talking or information being shared Gaarf would've transformed and killed everybody there..he saw a opening and took it.. he knew Subaru would restart anyway. The only issue is that he doesn't know how Subaru restarts if he knew that he dies every single time he might've been less careless with his tactics
