Your discussion at the end is interesting, about who exactly are Natsume Yuujinchou watchers/readers. I do think most watchers identify as girls/women. You're literally like, the third youtuber guy I've seen even mention this series, let alone react to the whole thing. I think the series is much more popular in Japan, so I can't speak for their demographics, but that's how I feel about the western demographic. For me personally, I think the people who enjoy Natsume Yuujinchou who can read and watch it over and over again may be people who enjoy novels? Especially fantasy or urban fantasy novels. It has a "slow" pace like a novel would, slowly building up to something in bits and pieces of the hero's journey (Reiko, the mystery of his grandfather, the Matoba's scheming, etc) These are all things I look for when picking up an actual book, and Natsume has it all, contained in a slice of life story taking place in rural Japan. Imo, a show like Natsume Yuujinchou would never hit mainstream in the west like popular shounen. Trying to get people to check it out is like pulling teeth, I've pretty much given up. It's easily consumable, but not in the way an action shounen might be, if that makes sense. So it ends up being kind of niche
